Balsamic Blueberry Goat Cheese Log with Crackers
This Balsamic Blueberry Goat Cheese Log made with fresh blueberries, Treeline's dairy-free Blueberry Goat Cheese, assorted nuts, and fresh thyme, is the perfect way to add some oomph to a holiday brunch or sweet afternoon snack. Ingredients
2 packages (8 oz.) Treeline Dairy-Free Blueberry Goat Cheese
2 cups fresh blueberries, plus more for serving
1 tbsp pure organic cane sugar
2 tbsp filtered water
1 tsp lemon juice
1 tbsp agave nectar
½ sprig fresh thyme, plus more for serving
1/3 cup pistachios
1/3 cup walnuts
6 servings assorted crackers
Balsamic glaze, to taste
Instructions
Lay a large rectangular piece of plastic wrap, approximately the size of a cutting board, on a clean work surface. Place blueberry goat cheese in center and wrap one side of plastic wrap around it, then the other. With your hands, gently shape into a log. Close the ends and gently transfer to freezer for 20 to 30 min until firmer, but still soft if pressed with your finger.
Meanwhile, add 1 ½ cups of the blueberries, sugar, and water to a small saucepan, and stir. Cover and bring to a boil, then remove lid and reduce heat to simmer for 12 min, stirring often. Add remaining ½ cup blueberries and simmer another 3 min, lowering heat if getting too thick. Remove from heat and stir in lemon juice, agave nectar, and thyme leaves. Let cool.
Finely chop pistachios and walnuts. Remove goat cheese from freezer, remove plastic wrap, and place on a serving board or plate. Gently press around ½ tbsp each chopped pistachios and walnuts across top of goat cheese. Serve goat cheese with remaining pistachios and walnuts on the side, assorted crackers, extra fresh blueberries and thyme sprigs. Top the blueberry goat cheese crackers with balsamic glaze as desired.
